Muscovado Making | Things to do
Muscovado is a healthy type of sugar, without the chemicals and processing of white and brown sugar. Cheap, local, and wholesome, muscovado makes for an excellent white sugar replacement, especially for people with diabetes. Interestingly, muscovado does not attract ants, unlike other processed sugars. Amidst sugarcane fields in Barangay Urdaneta in Magallanes, travelers can witness how muscovado is made the traditional way. At around 5:30 am, a water buffalo rotates a wooden trapiche, an old contraption that squeezes the juice out of sugarcanes. The juice is then boiled for five hours in a large cauldron until the juice is reduced to brown powder: muscovado. In a separate modern plant in Barangay Medina, travelers can watch how muscovado is made with the aid of machines. Muscovado de Magallanes Plant churns out 480 kilos of muscovado sugar a day.
